Making gravy drives a lot of people crazy – oh, the lumps! — which is the real reason bottled versions exist. Relax. There’s no shame in pre-packaged gravy here, we’re just dishing up a few ingredients to help turn that convenient shortcut into something with a little more character. Something that tastes better than homemade. Here is a short list of add-ons. Remember to go slow when experimenting, adding a little at a time and tasting along the way, especially before pouring a ladle over that pile of mashed potatoes.


Add herbs

Try thyme, sage, chopped parsley, some tarragon, some chives. When using fresh herbs, add towards the end of cooking.

Add a splash of wine

A couple tablespoons of dry white wine brightens up lighter poultry gravy, while red wine adds complexity to beef and pork gravy. Not a wine lover? Go with beer or hard cider.

Mustard adds character

Half a teaspoon of mustard brings that rustic character, with Dijon-style and coarse grinds topping the list. In a pinch, the yellow stuff you love to spread on top of hot dogs works too.


For Umami’s sake

A couple of fish sauce shakes kick up the umami factor. This is the name of the fifth taste which is sometimes called the definition of delicacy. You do not have it? Try soy sauce instead.


The vegetables offer fresh flavors

Chop a shallot or a couple of tablespoons of onion and sauté them in a pan with a little butter before pouring over the sauce to heat.

Finish with heat

Freshly ground pepper gives a lighter gravy a sharp edge and striking appearance. Don’t overdo it, though, because the flavor deepens as it cooks.
