How To Cook Salmon So It Doesn T Taste Fishy

Good salmon teriyaki has a very subtle flavor and extremely crispy skin. It gets this way because of a Japanese cooking trick…

The salt takes away the surface odor, so it smells better, and takes away the surface moisture, so the fish breaks down better when fried, broiled, or grilled. Here’s how to do it.

Presalted Alaskan Salmon – Japanese Style

  1. Lay out a sheet of wax paper. Sprinkle 1 teaspoon of kosher salt over it.
  2. Lay the fish fillet, skin side down, on the salted wax paper.
  3. Sprinkle about 1 teaspoon of kosher salt over the tenderloin.
  4. Let the tenderloin rest for about 30 minutes while the salt is absorbed by the tenderloin.
  5. Before grilling, brush a simple teriyaki sauce on the skin.
  6. Grill the salmon at 260°C for 4 minutes.
  7. Remove and brush again with the sauce.
  8. Grill until desired doneness (4-6 minutes).

As with most Japanese cuisine, the flavor you’ll get depends heavily on the ingredients you start with. The fresher and higher quality the fish, the better the results. I used fresh Copper River salmon; it was amazing. Here is a version of the recipe that you can save.

This idea, and many other incredibly useful Japanese advances in the culinary arts, can be found in Shizuo Tsuji’s indispensable book Japanese Cooking: A Simple Art.
